All-American Macaroni Salad & Fireworks!

Easy recipe for classic macaroni salad. Perfect side dish for cookouts and barbecues. Serve with hotdogs, burgers, chicken and pork as you celebrate the 4th of July with food and fireworks!Light up the grill and bring out the hotdogs, burgers, chicken or steaks. Add  the sides and get ready to celebrate! Memorial Day is the kick-off  of the backyard get-togethers that continues through Labor Day with the 4th of July right in the middle. What is one favorite side that shows up at each celebration? Yes, All-American Macaroni Salad.

It shows up at just about every backyard cookout and picnic. National and regional variations abound.  You can toss in ham or shrimp or other condiments and veggies to suit your fancy.

This is our family favorite that came from a sweet, long-time friend.  (thank you, Anne!)

Finely chopped green bell pepper, onion and sweet pickle relish bring on the flavor here. It is sweet with a little tang.

After a relaxed day of eating and connecting with family and friends and maybe chilling around the pool, excitement builds as the adults grab their lawn chairs and the kids toddle along to watch the booming fireworks display. Year-after-year we head to the place where our town has their celebration. In recent years it moved from a large open farm to the local high school where folks can sit in the football bleachers or right in the grassy areas.

 


Anxiously waiting for darkness to fall and then the start… with the rocket’s red glare…

Besides being a really flavorful macaroni salad, it is quick and easy to make. If you are short on time and need to take a dish along, make this. I love, love potato salad but this is so much easier.

All-American Macaroni Salad

PRINT RECIPE
 
INGREDIENTS:
1 lb box macaroni cooked according to pkg. directions; drained
 
DRESSING:
 
  • 2 cups Miracle Whip
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 4 Tbs. evaporated milk
  • ¼ cup sugar
  • ¼ tsp. celery seed
  • ½ chopped onion
  • 4 Tbs. pickle juice or relish
  • ¼ cup finely chopped green or Jalapeno pepper 
 
DIRECTIONS:

Combine the above ingredients in large bowl then toss with pasta

    Those are amazing firework photos. Do you know I have not had macaroni salad in years? My Mom made really good salad and I was always disappointed trying other versions. Maybe I will give yours a try because I have liked several recipes you have posted. I'll let you know if I do- xo Diana

    […] PRINT RECIPE INGREDIENTS: 1 1/2 cups Miracle Whip 1 tsp salt 2 tsp. sugar 1/2 to 1 tsp. celery seed 2 tsp. vinegar 1/2 cup onion, chopped 1 cup celery, chopped 1/2 cup sweet pickles, chopped 5 cups potatoes, peeled, cut into bite-size cubes and cooked until tender; drain and cool. 4 hard boiled eggs,, sliced DIRECTIONS: Combine first eight ingredients; add the cooled potatoes and toss gently.
