Zucchini Bars with Spice Frosting

Do you like gingerbread?  Well, even though there is no ginger in this recipe, these zucchini bars taste just like gingerbread. Perhaps it is the cloves that impart such a pleasant flavor. A thin coating of frosting, lightly spiced with a small amount of ground cloves, make for a very nice bar.

Not sure about the servings ~ I sure don’t get 24 pieces from a  9- or 8-inch square pan 😉

Zucchini Bars

PRINT RECIPE

Makes 2 dozen bars 

INGREDIENTS

  • 2/3 cup packed brown sugar
  • 1/4 cup butter or margarine, softened
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup Gold Medal all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup shredded zucchini, drained
  • 1/2 cup chopped nuts

Spice Frosting

  • 3/4 cup powdered sugar
  • 1 tablespoon butter or margarine, softened
  • 1/8 teaspoon ground cloves
  • 3 to 4 teaspoons milk

DIRECTIONS

Heat oven to 350°F. Grease bottom and sides of 9- or 8-inch square pan. In large bowl, mix brown sugar, butter, vanilla and egg. Stir in flour, baking soda, cinnamon and 1/2 teaspoon cloves. Stir in zucchini and nuts. Spread in pan.

Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

In medium bowl, mix all frosting ingredients until smooth and spreadable. Spread frosting over bars. For bars, cut into 6 rows by 4 rows.
Makes 24 bars

Variation
Turn these fall favorites into Christmas bars! Sprinkle with red and green decorator sugar, and add 1/2 cup chopped dried cranberries to the recipe.

    My sister-in-law grows lots of zucchini. We are always looking for new and delicious recipes. Thanks so much for sharing this recipe and for providing a way to print it. I know if it is from you, it will be good. I like gingerbread and zucchini bread. Can't wait to try it.

    I bet they are yummy! I made a lemon zucchini cake a while back and took it to friends. The guy is Lebanese and just couldn't imagine that I made a cake with "koosa" that's the Arabic word for zucchini. He ate it but just couldn't get past the fact that I made cake with a vegetable. 🙂 Have a lovely weekend. Tammy

    I DO really like gingerbread, but I haven't made it in a long time. So these zucchini bars have a comparable flavor? Hmmmm….I think I'm going to try them. It's pretty cold here in the Kansas City, MO area (after 4 or 5 consecutive days of beautiful weather in the 70s and 80s, we're now expecting 1-2 inches of snow tonight!), so some of these over the weekend would be a great little pick-me-up! I won't be getting 24 servings from a pan that small, either! More like 2-4 servings around here! 🙂 🙂 🙂 Your photo of the zucchini bars is very pretty, too! Thanks for sharing the recipe!

    It must be the cloves that sort of mimic the ginger. They look like another way to use zuchini, and a nice change from the regular zuchini bread. 🙂
