Raspberry Frosted Sweetheart Chocolate Cupcakes for My Sweethearts

Disney Princess Cupcakes start with a mix and are filled with frosting mixed with jam. Sweetheart Chocolate Cupcakes are a fun & yummy kids cooking project.Ella (I’m her caregiver) was excited to bring her Disney Princess Cupcakes and more cookbook to show me and she promptly picked out Sweetheart Chocolate Cupcakes for us to bake together. Little did we know when making them that my daughter, Jamie and her family would be spending the day with us.

A quick party

Jamie needed some rest and was looking for a chance to get out of the house so I told her to gather the kids just as they were, hop in the car and come and spend the day.

Thinking of how to throw together a plan for a houseful of children and remembering that it was my schnauzer, Raiders 9th birthday I told the kids we were having a Pizza Birthday Party to celebrate.  A menu of frozen pizza, canned peaches and popped popcorn would have to cover the nutritional chart this day. I even found some cute napkins and cups and no one minded that there were snowmen on them.

Sweet Cupcakes

The Sweetheart cupcakes are super easy because they are made using a cake mix. The book is full of fun decorating ideas and just right for kids in the kitchen. I think the book makes a lovely gift item for little girls who love Disney Princesses.

Well, the kids had a great time playing together, eating and celebrating Raiders birthday. I managed to keep them entertained and somewhat quiet and Jamie managed a few hours of needed sleep with her littlest one.

The cupcakes turned out so cute and a great cooking-with-kids project. Using a boxed cake mix and a tub of frosting, even the youngest baker will enjoy the experience. I didn’t have frosting on hand when Ella came, so we spent just a little extra time to make cream cheese frosting.

 

Sweetheart Cupcakes

INGREDIENTS:
  • 1 pkg, chocolate cake mix , plus ingredients to prepare mix
  • 1 container (16 ounces) vanilla frosting
  • 3 Tbs. seedless raspberry jam
  • Sprinkles (optional)
 
DIRECTIONS:
  • Preheat oven to 350 degrees.  Line 22 standard muffin cups with paper baking cups
  • Prepare cake mix according to package directions. Spoon batter into prepared muffins cups, filling two-thirds full. Bake about 18 minutes or until toothpick inserted into centers comes out clean.  Cool cupcakes in pans 10 minutes; remove to wire racks to cool completely.
  • Blend frosting and jam in medium bowl until smooth.  Cut off rounded tops of cupcakes with serrated knife. Cut out heart shape from each cupcake top with mini cookie cutter; reserve cutouts, if desired.
  • Spread frosting mixture generously over cupcake bottoms, mounding slightly in center.  Replace cupcake tops, pressing gently to fill hearts with frosting.  Garnish with heart cutouts and sprinkles, if desired.
NOTES:
  • I didn’t have a container of frosting so I made a batch of cream cheese frosting and then stirred in the jam.
  • I piped the frosting onto the cupcake bottom and then, after adding the top, I piped into the hole with additional frosting.
  • Instead of a small heart-shaped cookie cutter I used a round one.  A heart shape would be really cute though.

Cream Cheese Frosting

INGREDIENTS:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese
  • 4 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
DIRECTIONS:
 
Beat softened butter and cream cheese until well blended.
Add powdered sugar and vanilla. Beat until creamy.

    How sweet is this you got to have special time with the grandchildren and your daughter got some rest, what a treasure you are to your family. The cupcakes look so delicious too.
