Chocolate Dipped Figs with Pistachio

Easy and elegant sweet, after dinner dessert of fresh figs from backyard tree dipped in chocolate and topped with chopped pistachios.
The season for sweet, fresh figs from my backyard tree isn’t very long and I am taking advantage of every fig I pick letting none go to waste. Since the first larger harvest last week, I am finding just a few that are currently ripe and ready to harvest now. More are coming but today I have just enough to make a few chocolate dipped figs with chopped pistachio nuts. I am so tempted to eat them all now but I’ll be good and restrain myself to enjoy them with my husband tonight after dinner.

Don’t these look so Fancy Schmancy? I’m thinking, as I write this post, that an after-dinner dessert wine pared with these elegant figs would be a perfect and romantic ending to a week that has been a crazy, super hectic and stretching one. Too bad I don’t have wine and that we are having leftovers for diner. We will eat the chocolate dipped figs for dessert and pretend we had a lovely meal  ðŸ™‚
 

Chocolate Dipped Figs with Pistachio

 

Easy and elegant sweet, after dinner dessert of fresh figs from backyard tree dipped in chocolate and topped with chopped pistachios.
No pretending this is a difficult recipe. Nope. Super easy.
  • Wash, dry and slice the figs about a quarter-inch thick.
  • Chop the pistachio nuts.
  • Melt the chocolate in the microwave.
  • Then dip the figs and sprinkle on the nuts.
  • Place on a piece of parchment paper or waxed paper and pop in the fridge for the chocolate to firm and harden.
Then enjoy with your sweetie.

Easy and elegant sweet, after dinner dessert of fresh figs from backyard tree dipped in chocolate and topped with chopped pistachios.For two to three figs, melt a quarter of a cup of semi-sweet chocolate chips in a small bowl, in the microwave. Thirty second spurts at high power for 5-6 times, stirring between each cycle should do it. I like to add a half tablespoon of shortening. It makes the chocolate easier to coat the figs. This is optional, so if you want a thicker chocolate coating, skip the shortening.

 

Sprinkle with pistachios

Shell and chop the pistachios. Do this before you melt the chocolate. But you knew that, didn’t you. Simply dip each slice of fig into the melted chocolate, place on the paper and top with the chopped pistachios before the chocolate hardens. Refrigerate until serving time.
