Honey Cornbread Muffins

Make regular-size or mini Honey Cornbread Muffins with easy recipe. Drizzle with additional honey if you like and serve as a snack or a delicious side with soup, salad or dinner entree.
Lighter fare is on the menu after all of the overindulgence through the holidays. Today it was a hot bowl of Hamburger Barley Vegetable Soup and these tasty little Honey cornbread muffins from Patrick and Gena Neely. They are sweet and moist and if I’m not careful, I could once again overindulge on these!

Make muffins in a regular muffin pan to get a dozen or do as I did and bake up mini muffins.  I love to make mini muffins. They are just the right size for children and because I can have two muffins instead of just one.  That’s better, right 🙂

 Honey Cornbread Muffins

PRINT RECIPE

Makes: 12 regular size muffins or 3 1/3 dozen mini muffins

INGREDIENTS:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 stick butter, melted
  • 1/4 cup honey

12-cup or mini muffin pan

 

DIRECTIONS:

Preheat oven to 400 degrees F.

Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin or use mini muffin pans. Evenly divide the cornbread mixture into the papers. Bake until golden: 15 minutes for regular size muffins and 11-12 minutes for mini muffins.

    I have a similar recipe from a friend that is called Native American Cornbread … it's almost like a cake than cornbread. Yum! I always love a good bowl of soup with a yummy bread or muffin. Hope you are having a wonderful Wednesday. Tammy

    These cute muffins wouldn't be safe in my house. Corn muffins are great favorite and just out of the oven with a cup of coffee would be a perfect winter breakfast. Take good care, my friend, and keep warm. Hugs to you and John!
