Lavender Lemonade

By Lorraine

Using lavender from my herb garden, I made some refreshing lavender lemonade.

Editor’s note: This is an updated version of an article originally posted June 2011 with better photos and additional information.

On a hot summer day, a tall, icy beverage is so refreshing. Along with water and iced-tea, lemonade is a favorite thirst quencher.

How to make lavender lemonade

The lavender in lemonade

Culinary lavender harvested from herb garden for lemonade beverage.

Use lavender for lemonade sparingly

A fragrant and lovely herb, find sweet lavender growing tips, how to harvest and recipes using culinary lavender.

Lavender is a unique culinary ingredient and just a little bit goes a long way, especially if using dried flowers. Too much lavender and the result will taste like perfume or soap. Use just enough and the result is a lovely floral undertone that gives a unique flavor.

Fresh or dried lavender for lemonade

You can use either fresh lavender blossoms or dried to make lavender lemonade. I have lavender growing in my little herb garden. Extra lavender dries nicely and remains flavorful when stored in air-tight containers in the freezer. Just be sure to use the blossoms, not the green stems or leaves. If you don’t have lavender available locally, you can use purchased culinary lavender.

For lemonade, use only use culinary lavender

You should never use lavender that has been treated with pesticides or comes from a florist or nursery. Nor should you ingest lavender essential oil, which is toxic when swallowed.
The most common form of edible lavender is English lavender, with a lovely sweetness and subtle citrus tones.

A hint of lavender gives sweet lavender scones a unique and lovely flavor using lavender buds from the herb garden. A light glaze makes them perfect.

Tip: A good rule of thumb is 1/3 dried lavender to fresh lavender flowers.

Juicing fresh lemons for lemonade with lavender

juicing a lemon for tartar sauce

Choose a lemon that is heavy for its size and has a pleasant fragrance. The skin should be bright yellow with no wrinkling. A thinner-skinned lemon will yield more juice, while a thicker-skinned one may be better for zest. Be sure to check that the lemon is not too soft and has no signs of white or green mold.

Lavender Lemonade

Slightly adapted from Taste of Home

Yield: 6 servings

INGREDIENTS

  • 2 1/2 cups water
  • 1 cup sugar
  • 1 tablespoon dried lavender flowers (I used lavender from last years harvest)
  • 2 1/2 cups cold water
  • 1 cup fresh squeezed lemon juice. Five or six lemons will give you about 1 cup of lemon juice.
  • Ice cubes

DIRECTIONS
  • In a large saucepan, bring 2 1/2 cups water and 1 cup sugar to a boil.
  • Remove from the heat; add lavender.
  • Cover and let stand for 2-4 hour.
  • Strain and discard the lavender.
  • Stir in 2 1/2 cups of cold water and the lemon juice.
  • Chill and serve over ice.

Note: If using lavender from the garden, make sure it hasn’t been treated with chemicals.

Such sweet prose

I am not sure why this verse came to  mind for this photo.
Maybe because the flower seems to be reaching upward… heavenward.
