Chicken Soup

Easy recipe for creamy chicken soup full of carrots, onion and celery. Finish with cream, chunks of chicken or turkey and egg noodles.

 

Just like you, I have a favorite recipe for chicken or turkey noodle soup. But I have been wanting to try a creamy version and found this one from the Food Network. It’s DELICIOUS! Full of flavor and a little thicker than the broth as in a standard chicken noodle soup.

 
This soup cooks up quickly because it does not involve cooking the chicken to make the stock. And, it is a great way to use up leftover chicken or turkey. A rotisserie chicken from the grocery store is a great option as well. 

 

The original recipe does not call for noodles. We love the noodles and add them or sometimes add cooked rice at the end.

Creamy Chicken Soup

Slightly adapted from the Food Network Kitchens

Ingredients

  • 1/2 cup unsalted butter
  • 1 medium onion, chopped
  • 2 stalks celery (with leaves), chopped
  • 3 medium carrots, chopped
  • 1/2 cup flour
  • 7 cups chicken broth, homemade or low-sodium canned
  • 3 sprigs parsley
  • 3 sprigs fresh sage, rosemary or thyme
  • 1 bay leaf
  • 2 1/2 cups cooked, diced chicken or turkey
  • 1/2 cup heavy cream (can substitute half-and-half)
  • 2 1/2 teaspoons dry sherry
  • 1 tablespoon kosher salt (I added bouillon cubes to the broth so I needed very little additional salt.  A Tablespoon sounds like way too much to me)
  • Freshly ground black pepper to taste
  • 2 tablespoons chopped flat-leaf parsley
  • optional: 2 cups dry egg noodles, cooked and drained

 

Directions

Melt the butter in a large soup pot over medium heat. Add the onion, celery, and carrots and cook, covered, stirring occasionally, until soft, about 12 minutes. Add the flour and cook, stirring with a wooden spoon, for 2 minutes more.

Pour in the broth and bring to a boil while whisking constantly. Tie the parsley sprigs, sage, and bay leaf together with a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.

Stir in the chicken and bring to a boil. Remove from the heat.

Whisk the heavy cream, sherry, and salt into the soup and season with pepper to taste. Remove and discard the herb bundle.

Stir in the cooked egg noodles, if using. Divide among soup bowls, sprinkle the top of each bowl of soup with the chopped parsley and serve immediately.

    Yours is the second turkey soup recipe I've seen today. Must be a sign that I should use up the last of the turkey to make soup…lol Yours sure does look good and with colder weather arriving I've been in the mood for soup lately
