Remove from the refrigerator, unwrap and using a serrated knife, cut the log into 1/2-inch slices.

Peanut Butter Rice Krispies Roll

INGREDIENTS:

  • 1 (10 ounce) bag mini marshmallows
  • 1/4 cup butter
  • 1/4 cup creamy peanut butter
  • 6 cups Rice Krispies
  • 1/2 cup hazelnut spread
  • 1/2 cup creamy peanut butter

 

DIRECTIONS:

Line a jelly-roll pan with parchment paper; spray the paper with non-stick spray.

In a large microwave safe bowl, combine the mini marshmallows, butter and 1/4 cup peanut butter.

Heat on high 1/2-2 minutes; stir with a spoon until smooth.

Add the Rice Krispies and stir until evenly coated.

Spread the mixture onto the sprayed parchment paper. With hands moistened with cold water or sprayed with non-stick spray, press down the Rice Krispies mixture until even in the pan.

In another bowl, combine the hazelnut spread and 1/2 cup peanut butter. Stir until combined and smooth.

    I’m not a big fan of peanut butter. Do you think I could substitute almond butter? These look like a fun treat to make!

      Hello Arlene,

      Though I have never substituted almond butter for peanut butter in this recipe, I did a little research and it seems like it will work just fine.

      Substitute almond butter for peanut butter in any recipe or meal that you make. Almond butter has the same buttery and thick consistency that peanut butter has, but does not come in a “chunky” or “smooth” option. All almond butter varieties are smooth and creamy. However, you can find almond butter that is salted or unsalted.
