Applesauce Bread

INGREDIENTS:

  • 1 1/4 cup applesauce
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, slightly beaten
  • 3 tablespoons milk
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 cup chopped pecans; divided

Additional Topping Ingredients:

  • 1/4 cup firmly packed light brown sugar
  • 1/2 teaspoon ground cinnamon

DIRECTIONS:

Preheat oven to 350 degrees F.

Grease a 9 x 5-inch loaf pan.

Combine the applesauce, sugar, oil, eggs and milk in a large mixing bowl; stir well.

Whisk together flour, baking powder, baking soda, salt, 1/2 teaspoon cinnamon, nutmeg and allspice until well combined. Add to applesauce mixture, stirring well.

Fold in 1/2 cup pecans.

Pour batter into prepared loaf pan.

TOPPING:

In a small bowl, combine remaining 1/2 cup pecans, brown sugar, and 1/2 teaspoon cinnamon; sprinkle over batter in pan.

Bake for 1 hour or until a wooden toothpick inserted in the center comes out clean.

Cool in pan on a wire rack for 10 minutes; remove from pan. Cool completely on wire rack.

FROSTING:

I like to add a light grizzle of frosting on the applesauce bread using 1 cup confectioners sugar, a few grains of salt and enough milk (about 2 tablespoons), stirred together until desired consistency.
