Broccoli Salad

Broccoli Salad  (replace with my own image)

Broccoli Salad

INGREDIENTS

  • ½ pound bacon, cooked crisp
  • 2 heads fresh broccoli
  • 1 small red onion
  • ¾ cup raisins or dried cranberries
  • ¾ cup sliced almonds or  sunflower seeds
  • 1 cup mayonnaise
  • ½ cup white sugar
  • 2 tablespoons white wine vinegar
  • (2) 9-oz. pkgs. of cheese-filled tortellini, cooked al dente (optional)
  • Maybe add feta or crumbled bleu cheese?

DIRECTIONS

Cut the broccoli into bite-sized pieces and cut the onion into thin bite-sized slices. Combine with the bacon, raisins, and almonds and mix well.

To prepare the dressing, mix the mayonnaise, sugar, and vinegar together until smooth.

Stir into the salad.

For an absolutely awesome pasta salad, add (2) 9-oz. pkgs. of cheese-filled tortellini, cooked al dente, then well-drained and cooled. It makes a terrific picnic and potluck pasta salad and always gets rave reviews.
