Linguine with Bacon, Figs and Basil

If you remember my excitement about the figs harvested from my backyard fig tree, I am just as excited about a delicious pasta dish I just made that is topped with sweet figs. Linguine with bacon, figs and basil is an amazing combination of flavors and lovely if you are looking for a special dish to make for guests.

Types of pasta

Go ahead and substitute a different pasta for the linguine if you prefer. Fettuccine or spaghetti are a couple of suggestions.
 
 
If you like spaghetti but prefer a slightly wider, flatter noodle, you would like linguine. Spelled either linguine or linguini, it is an Italian word that is the plural form of linguina, “little tongue.” The root is the Latin lingua, or “tongue.”

This dish is great even with just the bacon and basil but it is really the figs that make it over the top good.
 
 
 

Cooking the bacon

And, the BACON.
 
The more the better.
 
This recipe can be made by cooking the bacon in a skillet and then sautéing the other ingredients in the bacon grease.
 
I have a time-saver cooking hack. I cook the whole package of bacon in the oven, allow it to cool and then freeze the extra. When I need it for a recipe, crumbling on a salad or for topping a morning egg sandwich, it is ready and convenient.

Just lay the strips of bacon on a baking sheet with sides. No need to cover with foil as the bacon doesn’t stick and the foil doesn’t really help with cleanup. Place the pan in a preheated 400 degree oven for about 20 minutes for thick sliced bacon, less for regular sliced bacon.
 
 
When ready to use, pull the number of strips you want from the freezer, place on paper towel or napkin and heat in the microwave on high setting for about a minute or until hot and sizzling. Now you are always bacon ready 🙂
 
 
Oh, and the pan… after discarding the grease, fill it with hot, soapy water and wait a few minutes. Use a brush to scrub away. It comes clean pretty easily.

Chopping ingredients

 
On to the linguine recipe… Chop or crumble the cooked and cooled bacon.
 
Mince a garlic clove and small-chop an onion.

Grate the fresh Parmesan and measure the cream.

Quarter-cut the figs.
 
 

 

Sauté the onion until soft in a few tablespoons of bacon grease or olive oil if you don’t have bacon grease, adding the garlic the last couple of minutes. Pour in the cream.

Add the cooked pasta and cheese; stir and cook a few minutes longer.

Linguine with Bacon, Figs and Basil Recipe

PRINT RECIPE

Servings: 6

INGREDIENTS:

  • 1 pound package linguine or pasta of choice
  • 1/2 pound bacon (I love the thick-sliced peppered bacon)
  • 1 small onion, small-chopped
  • 1 garlic clove, minced
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 12 fresh figs, quartered
  • 1/3 cup torn basil leaves

 

DIRECTIONS:
Cook pasta in boiling salted water according to package directions; drain, reserving 1 cup hot pasta water.

Cook bacon in skillet until crisp. Remove bacon to a plate and add onions to skillet. Cook over medium heat until soft; add garlic and cook 1 minute longer.

Pour cream into skillet; add hot cooked pasta and cheese. Cook, stirring constantly, 2 to 3 minutes or until cheese is melted.

Stir in 3/4 to 1 cup reserved pasta water until creamy. Season with salt and pepper to taste. Transfer to a serving dish. Sprinkle with basil and top with figs. Serve immediately.
