Shake and Bake Coating Recipe and Family/Friend Times

By Lorraine

Easy recipe to make your own shake and bake coating for a no-frying delicious, crispy coating for baked poultry and pork right in the oven.
Busy days and hungry kids call for easy meals. Do you remember the old Shake and Bake commercials with the little girl in her southern accent, enthusiastically exclaiming, “And, I helped!” I have always liked the product.  Nice flavor, little mess and no frying. Now I make my own shake and bake coating. It’s easy and economical. I use it for both pork and chicken and you can change up the spices to suit your taste. (Scroll to bottom of post for recipe)

NOTE: This is a long post filled with friends and family stuff. If you’d rather, scroll past quickly to the recipe at the end of the post. 🙂

Our daughter had the opportunity to go with her husband on a business trip to Charleston, South Carolina and we watched Chloe and Jet while Abbey went to their house to care for the school-aged children.

Babysitting grandkids

Breakfast and play-land is always a fun time.

Little ones fall asleep easily after playing hard (except when I let them nap too late in the afternoon and they are awake at bedtime longer than I can keep my eyes open).

playful moments

PopPop moments

The previous weekend, Keri was here and as a treat we went to a restaurant for lunch.

Dear friends

We ended our weekly Bible study group for the summer with a BBQ.

Jared and John participated in our churches 5th annual golf tournament. It was a rainy day but they still had smiles. Also caught a performance of Jared’s high school play.

We enjoyed the food and fellowship at a church picnic. In spite of gloomy weather, over 450 attended. And since I can hardly believe it, I snapped a few pics of Jared heading to school as he finishes senior year.

Rodeo adventure

Every few months we try to connect with John’s college buddies. Ray and Jan live in north Jersey, Patrick and Tish live about two hours south of them and we are just about in between. The host provides the entree and the other two couples make appetizers and dessert. Later, in the evening Patrick and Tish took us to Cowtown Rodeo, the longest running weekly rodeo in the USA. It was a new experience and though the forecast was for strong thunderstorms, the evening was most perfect.

This past Sunday morning, we celebrated our 35th church anniversary. with a special service and a luncheon afterward. We have been blessed to be part of Fellowship Community Church for almost 33 years and are so thankful for Pastor and his wife!

Now for the recipe…

Crispy, delicious chicken without frying using an easy recipe for homemade shake and bake coating to bake right in the oven.

Homemade Shake and Bake Coating

PRINT RECIPE
Oven temp: 400 F.
INGREDIENTS:
  • 2 cups dry bread crumbs
  • 3 1/2 Tbs. vegetable oil
  • 1/2 Tbs. salt
  • 1/2 Tbs. paprika
  • 1/2 Tbs. celery salt (I substituted a small amount of celery seed)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon minced onion
  • 1 pinch dried basil leaves
  • 1 pinch dried parsley
  • 1 pinch dried oregano
DIRECTIONS:
In a bowl or resealable plastic bag, combine the breadcrumbs, oil, salt, paprika, celery salt, pepper, garlic salt, minced garlic, minced onion, basil, parsley and oregano. Stir/mix until combined.
This recipe made enough for two batches of chicken legs. I spooned out enough to coat the chicken and put the unused portion into a small freezer bag and placed in the freezer for another use.

To make the chicken legs, wet each piece with water, shaking off excess and toss in a plastic bag until coated. Place coated chicken onto a lightly sprayed, foil-lined baking sheet. Bake in a 400 degree preheated oven until juices run clear and the chicken is browned, about 45-50 minutes.

RECIPE NOTE:

  • I used skinless chicken legs.  If using boneless breasts, be sure to reduce the baking time.
  • This coating works well for pork chops. Coat as above and bake until just cooked through, avoiding overcooking.

Oh yes, I remember Shake 'n Bake and that commercial. The recipe is timely, as I will soon have my grandsons for the summer and it is a challenge to think of supper every night after years of having an empty nest.
Your grandchildren are getting big! I love to see all the sweet family photos.

I always enjoy seeing pictures of your grandchildren. The chicken looks so good. I tried mixing up my own shake n bake once and my fussy husband didn't like it. If he hadn't known I mixed it myself he probably wouldn't have noticed the difference

I certainly remember those Shake n Bake commercials. And this recipe looks good. Thanks for sharing. Your life has certainly been full of good times. I love how kids play and then fall asleep. Working with little ones during the school year has certainly taught me much about them. I love those early years.
