Chocolate Covered Caramels

By Lorraine

Delicious Chocolate Covered Caramels made easy in the Microwave for a special Valentine's Day gift.It seems appropriate to share a sweet treat of chocolate covered caramels as I wrap up Cambrie and Chloe’s stay with us last week. Sugar and spice and everything nice… if you have a little girls in your life, you know what sugar and spice and everything nice means.

Since my grandchildren visit my blog more often than my daughters, because they love seeing the photos of themselves and each other, I am filling this post with pics of the end of the week.
Bubbles… bubble baths, blowing bubbles or washing dishes with a sink full of suds. They love it all.

We met up with my sister, her daughter, Chrissy and granddaughter, Olivia for a visit to a family fun Center and dinner at Chick-fil-A. Livvy and Cambrie don’t see each other very often, but since they were little, they immediately formed a friendship and love playing together.

Chloe didn’t want to climb the ladders and tall slides but she gave it her best shot at all of the games she tried. I noticed a look of displeasure as I watched her on a small climbing slide. When she came near, I asked if she was bothered by a little boy playing on the slide next to her. Her face looked sad and her voice lowered as she told me, “Him called me a baby, and he touched my foot.”  Then added, “I not a baby, I a tobbler.”

Sugar and Spice and Everything Nice

and take a little bagful of their love notes home!

The house is back in order and my heart is full, but oh, how much better the mornings were when these two cherubs tumbled out of bed and down the stairs for a new day!   ❤

Oh, and if Diana’s Delicious Caramels (pictured at the top of this post) were not already addictive, I dipped some in melted chocolate.

Here is how to make these crazy-good treats.

Chocolate Covered Caramels

Diana’s Delicious Caramels made in the Microwave

PRINT RECIPE

Use a large microwave safe mixing bowl (a 2-quart Pyrex measuring bowl with a spout is perfect to prevent boiling over that is both a burn hazard and a big clean-up mess)

INGREDIENTS

  • 1/2 cup butter
  • 1/2 cup Karo syrup
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup sweetened condensed milk (not evaporated milk)
  • 1/2 teaspoon vanilla
  • 1/2 cup chopped nuts (optional)
  • Melting chocolate for dipping, (optional)

DIRECTIONS

Butter an 8 x 8″ dish. (I had no problem removing the caramel from the dish but if you are concerned, line the pan with foil, extending foil over edges. Butter the foil.)

Melt butter in large microwave bowl in the microwave.

Remove bowl from microwave, add the Karo syrup, light brown sugar, granulated sugar and the sweetened condensed milk. Stir.

Microwave on high 3 1/2 minutes. Carefully remove from microwave, stir. Return to microwave for 3 1/2 more minutes.

Remove from the microwave; add the vanilla and chopped nuts (if using, I didn’t). Stir gently until only a few air bubbles remain.

Pour into prepared pan and set aside to cool completely.

Cut into squares and wrap individually using squares of waxed paper. Wrapping isn’t necessary, is time consuming but does make the caramels look special.

If you like, use melting chocolate and dip cut caramel pieces; place on waxed paper or silicone mat to harden. Add sprinkles while chocolate is still soft.

These pictures warmed my heart this morning. I love seeing how you and your husband integrate holidays and the love for your family together. They are learning so much from that interaction and from your examples. Each picture clearly depicts that to be true.
