Irish Lamb Stew

Easy recipe for Irish Lamb Stew with leeks, carrots, parsnips and dill. Perfect for St Patrick's Day. Substitute beef if you prefer for this gluten-free dinner entrée.Instead of our usual St. Patrick’s Day dinner of corned beef and cabbage, I made Irish Lamb Stew, brimming with leeks, carrots, parsnips and flavored with dill. Thickened with cornstarch instead of flour, it is gluten-free.

Irish lamb stew is such a satisfying stew with tender lamb and vegetables. I have substituted beef for the lamb and it is equally easy and delicious.

Lamb Stew is a great meal to take to someone under the weather. This is a meal I made recently for a friend with homemade bread, fruit with Creamy Orange Fruit Dip and a tray of Chocolate-Chocolate Chip Cookies. (The homemade bread is my Classic Sandwich Buns recipe shaped and baked as a loaf rather than buns.)

Preparing Irish Lamb Stew

Irish Lamb Stew

 
This simple lamb dish typically is called a white stew because the meat isn’t browned before it is simmered. 
 
PRINT RECIPE
 
Makes 4-6 servings. 
INGREDIENTS:
 
  • 1 pound lean boneless lamb, trimmed and cut into 1 inch cubes
  • 4 cups lower sodium beef broth
  • 4 medium-size leeks, chopped or one large yellow onion chopped
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/4 teaspoon black pepper
  • 6-8 medium-size carrots, sliced
  • 4 medium-sized parsnips, peeled and cut into 1/2 inch pieces
  • 1 teaspoon dried dill weed
  • 1/2 cup cold water
  • 1/4 cup cornstarch (or all-purpose flour)

DIRECTIONS:

  • In a Dutch oven, combine lamb, broth, leaks, bay leaf, salt, and pepper. Bring to a boil. Lower the heat and simmer covered for 45 minutes.
  • Stir in carrots and parsnips. Bring to a boil. Lower heat and simmer, covered, for 30 minutes more or until the meat and vegetables are tender. Stir in the dill weed.
  • In a small bowl, stir together 1/2 cup water and cornstarch, stir into meat mixture. Cook over moderate heat, stirring constantly, until mixture starts to thicken. Cook and stir for two minutes more or until thickened. Discard Bay leaf; adjust seasonings, if desired.

Did you know there is a difference between “cottage pie” and “shepherd’s pie?” Shepherd’s pie should only be named as such if it contains lamb, and “cottage” usually applies to one made with beef.     How is it possible to make lamb stew look so irresistible? In fact, I find myself wanting some for breakfast right now:) I never tasted lamb stew, but after seeing this post, I am finding myself eager to try it.     My husband would love this–he enjoys lamb and rarely gets it. I had dinner last night with a young woman who had never tasted it. But we were at a Lebanese restaurant and she had it for the first time. (and liked it). My mom often served leg of lamb for Sunday dinners.
