Apple Coffee Cake

An easy recipe for apple coffee cake with an oat and pecan crumbly topping and a white glaze. It is a lovely autumn dessert or snacking time treat. One of the best things about September is apple season. There is just an abundant number of ways to enjoy apples, like this apple coffee cake. It is an easy recipe and a yummy one too. It has a tender crumb with a lovely cinnamon crumb topping. It is so good!

Best of all, the temps and humidity were comfortable and an appreciated relief from the sweltering heat and humidity that persists through the summer. To enjoy the almost-fall day, we went with my daughter and her boyfriend to a beautiful farm a 30-minute drive from our home.
 
 
Empire and Fuji apple picking Johnson's farm Our main interest was to see the fields of blooming sunflowers but it was equally enjoying  picking fresh apples. Empire and Fuji apples were the ones ready for picking that day and I picked a peck that included both.
 
 
An easy recipe for apple coffee cake with an oat and pecan crumbly topping and a white glaze. It is a lovely autumn dessert or snacking time treat. I used the Fuji for eating and the Empire apples to make this apple coffee cake. The cake has a lovely, light-texture and can be made without the addition of apples, if you want to change it up. It can be served without the confectioner sugar gazed as well. But the addition of apples adds a really nice autumn taste.
 

How to make apple coffee cake

Making the crumb topping for apple coffee cake

Ingredients for the crumb topping for apple coffee cakePrepare the topping by adding 1/4 cup flour, 1/4 cup butter, 1/2 cup light brown sugar and 1 tsp ground cinnamon in a medium-size bowl.

Toss in 1/4 cup oats and pecans.

Preparing the apples for apple coffee cake

Wash and peel apples. I used two apples for this recipe.

Remove the apple cores and discard.

Chop the apples to measure about 1 1/2 cups.
 

Making the apple coffee cake batter

 
In another bowl, add 3/4 cup sugar, 1 egg and 1/3 cup melted butter.

 

 
Add 1 tsp vanilla extract and 1/2 cup milk and mix to combine.

Add 2 1/2 tsp baking powder and 1/2 tsp salt to 1 1/2 cups all-purpose flour.

Add the dry ingredients into the wet, and mix well.

Fold in the chopped apples.

Pour the batter into prepared baking pan.

Sprinkle the topping crumb mixture evenly over batter. Bake for 35-45 minutes, or until inserted toothpick comes out clean. Tent with foil if the top is browning too quickly.

Remove from oven and allow to cool on a wire rack.
 
 

Making the glaze 

Stir together 1 cup confectioners sugar, 2 teaspoons cream and a few grains salt. Drizzle onto the slightly cooled coffee cake.

Apple Coffee Cake

Adapted it from Southern Food

PRINT RECIPE

TOPPING
1/4 cup flour
1/4 cup butter
1/2 cup light brown sugar
1 tsp ground cinnamon
1/4 cup oats
1/4 to 1/2 cup Chopped Pecans or walnuts, optional

 

CAKE
1 1/2 cups all-purpose flour
3/4 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 egg
1/3 cup butter, melted
1/2 cup milk
1 tsp vanilla extract
1 to 1 1/2  cups peeled, cored and chopped apple

 

GLAZE
1 cup confectioners sugar
2 tsp. cream (more or less for desired spreading consistency)
few grains salt (optional)

 

DIRECTIONS:

Preheat oven to 375 degrees F; spray a 9×9 inch baking pan (square or round).

Prepare topping by combining flour, butter, brown sugar and cinnamon using a pastry cutter or fork. Toss in oats and stir. Set aside.

Cream together sugar, egg and melted butter. Add vanilla and milk.

In another bowl, sift together the flour, baking powder and salt. Add the dry ingredients into the wet, and mix well. Fold in apples.

Pour the batter into prepared baking pan; sprinkle topping crumb mixture evenly over batter. Bake for 35-45 minutes, or until inserted toothpick comes out clean. Tent with foil if browning too quickly.

Stir together the glaze ingredients; drizzle onto slightly cooled coffee cake.

    This looks so good. I thought of you yesterday when I made the sauteed apples for the second time. I copied the recipe so I see your blog name on my kitchen counter often…We love the recipe and it is so simple. My husband raves about the sauteed apples and he rarely does that.. 🙂 thank you for sharing the recipes..
