Banana Cake with Vanilla Bean Frosting

Easy recipe for a one-layer, moist and delicious banana cake with vanilla bean frosting. Baked in a 9-inch pan for a small size dessert.
My blog friend Lynn @Happier Than a Pig in Mud shares the tastiest recipes!  I have made several and enjoyed each one! She found this delicious Banana Cake with Vanilla Bean Frosting and I like it for the same reasons Lynn does ~ moist, delicious and small enough to bake in a countertop oven.

Our granddaughter, Shaela and her family visit us every August. Soon after her arrival she asked, “When can we bake?” Kids love to be in the kitchen and grandmothers love to share the experience with them. I knew just what we’d make together. So first thing the next morning, before anyone else was up, Shaela hopped onto the counter and we began.
 
 
 
Banana Cake with Vanilla Bean Frosting
The cake was a hit! Little girls like to have tea parties so we gathered a few things and set up a lovely table complete with candles even though it was early in the day.

I get to see Shaela and her siblings just a few times each year so making each moment special is really important to me hoping she will cherish these memories as much as I do.

 

Banana Cake with Vanilla Bean Frosting

CAKE INGREDIENTS

  • 2/3 cup sugar
  • 2 tablespoons butter, softened
  • 1/2 cup sour cream
  • 3/4 cup mashed very ripe banana (about 2 bananas)
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda

 

INGREDIENTS FOR VANILLA BEAN FROSTING

  • 2 tablespoons butter, softened
  • 1 1/4 cups confectioners sugar
  • 1/4 cup heavy cream (I use less)
  • 1/2 vanilla bean, seeded and scraped
  • pinch of salt

 

Preheat oven to 375°F.  Spray a 9×9 pan with non-stick cooking spray.

Cream together butter and sugar, until fluffy, about 1 minute. Add the sour cream and egg; mix well. Add the mashed banana and vanilla, mix well again.

Combine the flour, salt, and baking soda in a small bowl; add to the butter mixture. Stop mixing as soon as it is combined. Pour the batter into your prepared pan and bake for 20 to 25 minutes. The cake will be done when a toothpick inserted into the center comes out clean.

Let the cake cool completely. To make the frosting, cream together the butter and confectioners sugar. Add the heavy cream slowly and beat until smooth and fluffy, about 2-3 minutes. Add the scraped vanilla bean and a pinch of salt.  Spread the frosting over the cooled cake

 

 

Banana Cake with Vanilla Bean Frosting Recipe Notes:

Just as Lynn did, I substituted vanilla for the Vanilla Bean using 1/2 tsp.

Again as Lynn noted, the butter and the powdered sugar did not cream together but came together when the liquid was added.  I used fat-free Half-n-Half and did not need 1/4 of a cup. I probably used 1/8 of a cup to get the right consistency. Even without heavy cream, the frosting was heavenly.

I baked the cake in an 8-inch pan.

    Delicious cake. Have made it several times for grandaughters that love banana cake or muffins. Instead of icing the cake I put half the batter in pan sprinkle with chocolate chips and then with rest of batter. Just like icing in the middle of the cake

    Yummy looking banana cake. I just love your teapot. My brother has a similar individual teapot with cup but it is plain yellow. The "apple" knob is too cute.

    Banana Sheet Cake is a family favorite. This one is a better size for lots of days. Lynn does post some terrific recipes and with a lot more frequency than myself. Looks like you're have a fun summer too!
