Cranberry Blueberry Bread

Some of my happiest days are the ones spent in the kitchen preparing food for my family and friends. I love being a wife… a mom… a homemaker. I especially enjoy serving a meal everyone enjoys.
 

Baked Ham lightly sweetened with brown sugar glaze is on the list of favorites.
Grilled Asparagus, Sweet onions and Pineapple slices make nice sides.

 

Along with potato au gratin with cheddar cheese and a little fresh rosemary.

 

Sauteed Apples seems to compliment any entree and since they are easy to make, I serve them often.

 

A slice of Cranberry Blueberry Bread (recipe follows) for dessert and leftovers will be for breakfast or snack.

 

 

 

Cranberry Blueberry Bread

Ingredients
3 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 cup granulated sugar
1/2 cup butter, softened
2 eggs
1 cup buttermilk
1 cup whole berry cranberry sauce
1 cup fresh or frozen blueberries, thawed if frozen

 

Directions
Preheat the oven to 375 degrees. 
 
Combine flour, baking soda, baking powder, and salt; set aside. 
 
In large mixing bowl, cream sugar and butter. Beat in eggs and buttermilk. Stir in flour mixture, blending well. Stir in cranberry sauce and blueberries.
 
Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean. Remove from pan and cool on wire rack. Yields 1 loaf of bread.
 
Blueberry Butter
 
1/2 cup fresh or frozen blueberries
1/2 cup butter, softened 
2 tablespoons confectioners sugar
 
Combine all ingredients, blending well. Store in airtight container in refrigerator. 
Yields about 1 3/4 cups of butter.
