Parmesan Crusted Chicken

with Honey Mustard Sauce

PRINT RECIPE

Serves 8

INGREDIENTS

  • 2 ½ pounds chicken breast (8 medium), lightly pounded to about 1/2 -inch thick.
  • 1 cup panko breadcrumbs
  • 1 cup Parmesan cheese
  • 1/2 tsp onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoons paprika 
  • 5 tablespoons olive oil
  • Snipped chives, green onions, or fresh parsley for garnish, if desired.

HONEY MUSTARD

  • 2/3 cup mayonnaise
  • 3 Tablespoons honey
  • 3 tablespoons Dijon mustard

DIRECTIONS

Preheat oven to 425 degrees.

Honey Mustard Sauce:

In a small bowl, combine the mayonnaise, honey, and Dijon mustard, stirring until smooth. Set aside 4 tablespoons for preparing the chicken and reserve the rest for serving.

Parmesan/panko topping:

In a medium-sized bowl, combine the panko breadcrumbs, Parmesan cheese, onion  powder, garlic powder and paprika. Add 5 tablespoons olive oil and stir to combine

Preparing the chicken:

  1. Pat the chicken dry with paper towels.
    Place on a lightly sprayed baking pan.
    Spread the top of each chicken breast with a layer of honey mustard sauce.
    Mound each breast with the Parmesan/panko mixture, pressing firmly to adhere.
    Bake the chicken 15-20 minutes or just until cooked through.
    Use the reserved honey mustard sauce to drizzle on the chicken when serving.
