Pineapple spoonbread, also called pineapple casserole or soufflé is the perfect side dish for baked ham for Easter or holiday dinner. It is so easy, made with bread cubes, butter and crushed pineapple.Serving a baked ham for Easter?  Looking for a delicious side dish? Pineapple Spoonbread is a casserole we first had at my sister-in-laws when we were first married many, many years ago. It quickly became a favorite and goes with ham like stuffing goes with turkey.

Just a few ingredients are needed to make pineapple spoonbread.

*Usually I cream the sugar and butter together with a mixer.  This time I melted the butter and whisked together. I doesn’t seem to make a difference.

Pineapple Spoonbread

PRINTABLE RECIPE

INGREDIENTS:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 20-oz can pineapple, crushed (undrained)
  • 4 eggs
  • Pinch of salt (optional)
  • 7-9 bread slices, cubed

DIRECTIONS:

  • Preheat oven to 350 degrees.
  • Cream butter and sugar.  
  • Add pineapple, eggs and salt.
  • With a spoon, gently stir in bread cubes and toss lightly until combined.
  • Pour mixture into a greased casserole dish.
  • Bake 45-60 mins until beginning to brown.

Yields 6 servings

    Hi Tammy, Regular white bread works fine but I really like using potato bread. Wanting to use left over bread one time, I used part wheat bread but didn't like the flavor too much.

    My great grandmother used to make this, but call it pineapple souffle. I make it for every holiday now because it's such a huge hit. I've never seen anyone else make it!!

    We have always had pineapple and banana "fruit salad" with our Easter ham. Last year it was forgotten and I really missed it- this may be even better though!!!

      I’d like to add something crunchy to this great dish. Trying to decide if I should try celery or chopped water chestnuts. Thinking of traditional dressing as including celery. Also, water chestnuts are often in Asian dishes with pineapple. Any thoughts??? Another addition could be fresh cranberries, but that doesn’t provide the crunchiness I’m seeking.

    My gosh, Lorraine! What a great side dish for ham. I always bake my ham with pineapple slices on it with marchino cherries in the center of each slice…and the rest dotted with cloves. Everyone always dives to get a pineapple slice so this is a great recipe for me. I am copying it over. xo Diana

    This is one of the things I like most about blogging – the chance to try things that aren't part of my everyday life. I've read about spoonbread in novels, but it isn't something that is served up here. I will give it a try with the Easter ham as it sounds intriguing!
