Pretty Easter Cake and Spritz Cookies

Dessert this Sunday includes Pretty Easter Cake and Spritz Cookies. The layered cake is frosted with a sprinkling of flaked coconut. The classic spritz cookies are decorated with pastel colored sprinkles.I was inspired to make the cake from a lovely place I recently visited. Pops and Podge shared their fabulous Directions/Tips for  making a beautiful Easter cake.  They included a lovely lemon filling and egg-shaped cake pops covered in melting chocolate for the top.  I spread frosting between the cake layers instead of using the lemon filling.

The springtime classic Spritz cookies are made using a cookie press so they fill a tray quickly. Add a few sprinkles of colorful sugars and a tiny chocolate chip for the center.

 

Classic Spritz Cookies

PRINT RECIPE
Ingredients:
1 1/2 cups (3 sticks) butter or margarine, softened (do not substitute vegetable oil spread)
1 cup sugar
1 egg
1 teaspoon vanilla
3 1/2 cups all-purpose flour (14 ounces)
Colored sugar or sprinkles (optional)
 
Directions:
1. Preheat oven to 375°F. Beat butter on medium speed of electric mixer until creamy. Add sugar, egg and vanilla; beat well. Add flour, 1 cup at a time; mix well. Dough will be soft; do not refrigerate.
 
2. Fill Cookie Press, fitted with disk of your choice. Press dough onto ungreased cookie sheet 1 inch apart. Decorate cookies with colored sugar or sprinkles, if desired.
 
3. Bake 10-12 minutes or until firm but not brown. Cool 2 minutes; remove to cooling rack. Repeat with remaining dough.

 

Pretty Easter Cake

Such a pretty little cake that whips together quickly using items already in the pantry. I didn’t add the lemon filling. It calls for a white cake mix but I had only French Vanilla.

A tub of frosting
Candy bar with nuts ~ probably better without nuts to make chocolate curls but that’s what I had.

I divided the batter into three bowls and added food coloring.  Poured into three 8-inch pans and baked.

When cooled, I frosted and patted coconut onto the sides, shredded the chocolate bar with a vegetable peeler and mounded onto the top of the cake. Hollowed out a nest and popped in a few foil-covered chocolate eggs.

    No, no my shiny eggs were just hard boiled and dyed. I did polish them with olive oil after they dried. The oil just enhanced the depth of the color!
