Pumpkin Bars

By Lorraine

Pumpkin bars with cream cheese frosting is an easy autumn recipe filled with warm fall flavors. Perfect with a cold glass of milk for snacking or with coffee or tea for break time. Easy to make Pumpkin Bars are moist and just right with a thin layer of cream cheese frosting. Combine all of the ingredients together in mixer bowl then pour into a greased 9 x 13-inch pan and bake. When cool, frost and enjoy. Refrigerated leftover cake.

Pumpkin Bars

recipe from a friend ~ Nov 1985

INGREDIENTS:

  • 3/4 cup oil
  • 2 cups sugar
  • 2 cups pumpkin
  • 4 eggs
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 cups flour

DIRECTIONS:

  • Mix in large bowl.
  • Pour into a greased 13 x 9-inch pan
  • Bake 350 degrees. Bake 35-40 minutes or until pick inserted comes out clean

ICING:

  • 3 oz. softened cream cheese
  • 1/4 cup butter
  • 1 Tbs. orange juice or milk
  • 1 3/4 cups powered sugar
  • 1 tsp. vanilla

Cream the cream cheese with an electric mixer.
Add in butter and orange juice; continue mixing together until light and fluffy.
Add confectioner’s sugar, 1/2 a cup at a time. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting.
Add in vanilla and beat until light and fluffy.

RECIPE NOTE and Note to self~
Next time I make these pumpkin bars, plan to bake in a greased 15 x 10 x 1-inch pan and bake for about 25-30 minutes. I’ll update with the results 🙂
