Ranger Cookies for Back-to-School

Hearty and satisfying cookies made with oatmeal, coconut and cereal that kids of all ages will love. Toss in some chocolate chips if you want and serve with a glass of milk.
Waaayyyyy back, when our twin daughters were in preschool, a friend shared this recipe for Ranger Cookies.  Since our little Ella will be heading off to kindergarten soon, we made a batch together today. These chewy and crunchy cookies passed her finicky taste-buds even over the fresh bakery cookies from the grocery store.

 What are Ranger Cookies

Where the name Ranger cookies came from is not clear. I’m not sure they have anything to do with rangers although they would be great to snack on while roving through forests. These golden brown cookies are crispy and delicious and have been around for years. A tasty blend of oats, brown sugar, coconut and cereal make them a favorite with kids. Especially nice as an after-school treat with a tall glass of milk.

Ranger Cookies Recipe

PRINT RECIPE

INGREDIENTS:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup quick-cooking oats
  • 1 cup Wheaties cereal
  • 1/2 cup coconut

DIRECTIONS:

Preheat oven to 375 degrees

With mixer, cream butter and sugars until light and fluffy. Beat in egg and vanilla.

Combine the flour, baking soda, baking powder and salt; add to creamed mixture and mix well. Stir in the oats, cereal and coconut.

Drop by spoonfuls 2 in. apart onto ungreased baking sheets.
Bake 10-12 minutes or until golden brown. Remove to wire racks to cool.

NOTES:

  • Sometimes I toss in a small handful of chocolate chips, maybe 1/4 cup.
  • I substituted Raisin Bran Crunch for the Wheaties this time and it was great.
  • Recipe can be doubled

    You "stage" your food photos so beautifully. This smacks of back to school–I see the marker pens along side the cookies all ready to take somewhere. And the writing on your photo, seem to be the very colors of those markers, as if you had just used them and set them aside! Creative!

    I am no longer eating sweets but this makes me want to get in the kitchen tomorrow and make these. It's bad knowing I have all the ingredients so I have no excuse to say, "I would have to go to the store but do not have time". So I am trying to think of an excuse not to make these…
