Orange Poppy Seed Tea Bread with Old Friends

By Lorraine

Orange poppy seed tea bread with dried cranberries is lovely for breakfast, snack or to share with friends. Serve frosted or plain. Sweet friendship poem.I’d like to say that old refers to length of time. Though that is true somehow old is becoming a reality that we can hardly believe! My friends are coming by for a much appreciated catch-up time. How is it, that at this stage of our lives, it is harder to find time to connect than when our children were all little and at home. Somehow we are all busier now than ever before. So today I am chiseling out some time. brewing a pot of coffee, serving a lovely Orange Poppy Seed Tea Bread and welcoming dear friends.

Shake and Bake Coating Recipe and Family/Friend Times

By Lorraine

Easy recipe to make your own shake and bake coating for a no-frying delicious, crispy coating for baked poultry and pork right in the oven.
Busy days and hungry kids call for easy meals. Do you remember the old Shake and Bake commercials with the little girl in her southern accent, enthusiastically exclaiming, “And, I helped!” I have always liked the product.  Nice flavor, little mess and no frying. Now I make my own shake and bake coating. It’s easy and economical. I use it for both pork and chicken and you can change up the spices to suit your taste. (Scroll to bottom of post for recipe)

Back in the swing of things

By Lorraine

We realized the time and energy it would take to plan and prepare for our trip abroad but what I didn’t expect was how hard it would be to get back into the swing once we returned home.

Unpacking, laundry, connecting with family, email, snail mail, photos from camera, iPhone photos, sorting photos, editing photos, food shopping, house cleaning, yard work, even making meals is a chore (and you know how I love to cook!)

A cold when I got home (so happy we were well while away) slowed me down too.

I am slowly catching up and getting back in the swing of things as we cherish these these family moments.

Path of Life

By Lorraine

Jared and a group of his buddies recently hiked 11 miles through the New Jersey Pine Barrens. His friend, bringing up the rear, snapped a photo that he let me use.

This Bible verse is so fitting as these young men are beginning their senior year of high school.
A fine group of guys, they also hiked Pinnacle Peak in Bucks County, PA
Though dismissed in our culture, I believe Gods ways are best and pray for our youth,
How can a young man keep his way pure? By guarding it according to your word
Psalm 119:9

As a last hurrah, a few of us relaxed around a chiminea Labor Day evening. John picked up a rusted chiminea at a garage sale for five bucks.  He wire-brushed it and spray painted with heat resistant paint. Eleven dollars later it now looks great and worked perfectly as we roasted marshmallows for making S’mores.
The patio fan has been installed and all of the repairs and painting is finally complete!
Well, a little brick work remains but is it a small job.
Over the winter, I will try to decide what I will plant where the boxwood bushes once grew and tackle that in the spring.
It won’t be long before the furniture is stored in the shed and the racks full of firewood take its place.
This year has zoomed by an breakneck speed.

Grilled Marinated London Broil

By Lorraine

Almost thirty-one years ago families from various places moved in to new homes and made Raleigh Lane a friendly and close neighborhood.  Our kids grew up together, played together and still keep in touch through social media. Many years ago, a neighbor made a Grilled Marinated London Broil that everyone just loved! Jody shared her recipe, and I for one have made it many, many times. It’s a favorite!

Make-Ahead Breakfast Burritos

By Lorraine

I wanted to send my daughter and family and their sweet friends off with a hearty breakfast before their long drive home but I didn’t want to waste moments in the kitchen that could be spent enjoying their visit. A make-ahead breakfast helped out.

Jill, Brad and kids along with their good friends and their three sons drove here from upstate New York, spent the night, then flew to Florida for their dream vacation at Disney. After their return flight, they all stayed over again. Because they are not able to get (real) Philly cheese steaks and pizza at home, their request was to get take-out for dinner from our favorite restaurant. It took a trek through eight-inches of fresh snow and freezing temperatures to pick up three pizza’s and ten cheese steaks to fill up the twenty-four people gathered together.
Breakfast the next morning included Breakfast Burritos, Blueberry Boy Bait cake and Baked Oatmeal.
The Breakfast Burritos, made the day before, were stacked in a dish, covered with plastic wrap and placed in the refrigerator.  At serving time, I removed the plastic wrap and warmed them in the microwave at 60% power until heated through.

Leftover burritos were wrapped individually and placed in the freezer. Directions below for reheating instructions.

PRINT RECIPE

Ingredients

1 pound Jimmy Dean® Premium Pork Sausage Roll
1-1/2 cups frozen cubed hash brown potatoes
1/4 cup diced onion
1/4 cup diced green or red pepper
4 eggs, lightly beaten
12 flour tortillas (8 inches), warmed
1/2 cup shredded cheddar cheese
Picante sauce or salsa (optional)
sour cream (optional)

Directions
In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the potatoes, onion and pepper; cook and stir for 6-8 minutes or until tender. Add eggs; cook and stir until set.

Spoon filling off center on each tortilla. Sprinkle with cheese. Fold sides and ends over filling and roll up. Serve with picante sauce or salsa and sour cream, if desired.

To freeze and reheat burritos: Wrap each burrito in waxed paper and foil. Freeze for up to 1 month. To use, remove foil and waxed paper. Place one burrito on a microwave-safe plate. Microwave on high for 2 to 2-1/4 minutes or until a meat thermometer reads 165°, turning burrito over once. Let stand for 20 seconds.
Yield: 12 burritos.

Blueberry Boy Bait  is a yummy cake any time and it also freezes well. I baked one the day before and refrigerated. Here is the link for the Blueberry Boy Bait recipe.
I didn’t make the Baked Oatmeal ahead but did gather the ingredients together for quicker preparation in the morning.  Here is the link for the Baked Oatmeal recipe.
After a long drive, a week of non-stop vacation, running and playing with cousins, the kids spent some less physical time on their devices as the grown-ups chatted. No doubt this generation is connected, comfortable and capable using technology!
After breakfast, they were off on the last leg of their journey.  They arrived home safe and sound but not quite ready for…

French Onion Soup

By Lorraine

Another recipe served at our French-Inspired Birthday Lunch

French Onion Soup
source: epicurious

PRINT RECIPE

INGREDIENTS
2 lb medium onions, halved lengthwise, then thinly sliced lengthwise
3 sprigs fresh thyme (rosemary is good too)
2 Turkish bay leaves or 1 California
3/4 teaspoon salt
1/2 stick (1/4 cup) unsalted butter
2 teaspoons all-purpose flour (I used 2 Tablespoons)
3/4 cup dry white wine (I used a pinot grigio)
4 cups reduced-sodium beef broth (32 fl oz)
1 1/2 cups water
1/2 teaspoon black pepper
6 (1/2-inch-thick) diagonal slices of baguette
1 (1/2-lb) piece Gruyère, Comte, or Emmental (or cheese of choice in quantity desired)
2 tablespoons finely grated Parmigiano-Reggiano

6 (8- to 10-oz) flameproof soup crocks or ramekins (Since my menu included many items, I served the soup in small ramekins)

DIRECTIONS

Cook onions, thyme, bay leaves, and salt in butter in a 4- to 5-quart heavy pot over moderate heat, uncovered, stirring frequently, until onions are very soft and deep golden brown, about 45 minutes. Add flour and cook, stirring, 1 minute. Stir in wine and cook, stirring, 2 minutes. Stir in broth, water, and pepper and simmer, uncovered, stirring occasionally, 30 minutes.

While soup simmers, put oven rack in middle position and preheat oven to 350°F.

Arrange bread in 1 layer on a large baking sheet and toast, turning over once, until completely dry, about 15 minutes. (I sliced baguette, drizzled with olive oil, sprinkled with salt and pepper and toasted in a toaster oven)

Remove croûtes from oven and preheat broiler. Put crocks in a shallow baking pan.

Discard bay leaves and thyme from soup and divide soup among crocks, then float a croûte in each. Slice enough Gruyère (about 6 ounces total) with cheese plane to cover tops of crocks, allowing ends of cheese to hang over rims of crocks, then sprinkle with Parmigiano-Reggiano.

Broil 4 to 5 inches from heat until cheese is melted and bubbly, 1 to 2 minutes.
