Happy Cambrie

A new baby will be joining Cambrie, Caleb, Silas, Noah and Keri in February!
Maybe a leap year baby
 If it’s a baby girl there will be an even 3 girls and 3 boys for them
and
5 granddaughters and 5 grandsons for us.
Don’t know yet but it’s gonna be fun!

The Boys

It was a long wait but we finally got miniature golfing with three of our grandsons this evening. 
It began as a birthday celebration for Noah who had his 7th birthday way back in September.
The miniature golf course closed for the winter before we were able to get there.
When Silas had his 5th birthday in May, he wanted to go golfing too.
In June Jared turned 14 and always enjoys the opportunity to see if he can get a hole-in-one.
Miniature Golfing sounded fun to him .
So this Mom-Mom and Pop-Pop set aside this weekend just for
the boys.

After a fun time golfing, we headed home for a kid friendly dinner, birthday cake, make-your-own ice-cream Sundae’s and a little wiffle ball in the back yard.
~*~
A blueberry pancake breakfast is on the menu for tomorrow morning
before heading to Strawbridge Lake to do some ‘frogging’.
Because…
that’s what little (and not so little) boys are made of.

I saw the eye doctor again this morning and am happy that my eye is improving.  I need to continue the drops and should be good as new next week.

Butter Cream Frosting
2 lbs. confectioners sugar
1/2 cup (1 stick) softened butter
pinch salt
about 10 Tablespoons milk or cream (depending on desired consistency)
3 tsp vanilla

Combine all of the ingredients and beat until smooth and creamy.
Add food coloring if desired

A moment with Ryan and A Moment with Brenna

Ryan, Mom-Mom & Otto the Orange
 While the others were getting dressed for church last Sunday morning,
Ryan was telling me about the little guy he found
at a garage sale on Saturday.
Otto the Orange 
is the mascot for the athletic teams of Syracuse University
in Syracuse, New York where Ryan’s daddy got his math degree.
Ryan is still sporting the remains of a bruised cheek and black eye
from a collision he had playing tag with a schoolmate.
♥ ♥ ♥

Very early Thursday morning we heard gentle knocking on our bedroom doors (we have two ~ one from the hallway and one from the room we use as a nursery).  We asked who it was and what they wanted but received no answer.  The knocking continued back and forth, from door to door for a long time but no response.
I finally opened one of the door to see Brenna!
“What do you want, Honey?”
Her princess-like blue eyes gazing up at me, she asked:
“Mom-Mom, would you wear your blue shirt that matches mine?”
It must have been so important to her!  I was happy to oblige her sweet request.

Grandchildren and Children

We had a great week with kids.
Jill and family are heading back to Central New York tomorrow.
How we enjoyed every minute they were here!
John and Brad worked really hard doing some
landscaping in the front yard on Wednesday.
After a long day and warm (80 degree) temps, Jamie and kids
joined us for Pizza and Cheesesteaks for dinner and
ice-cream cones for dessert.
It was a perfect evening to eat outside and play ball!

Baby Cambrie toddled about.
John took a second vacation day today and we headed to Philly
 to see the Liberty Bell
 and the Betsy Ross House
This evening, the little ones were left with a babysitter and we all met at Outback Steak House for a late dinner.  It was so much fun!
It was hard getting pictures in the subdued light, but everyone was together
and
my heart was very happy!

Sweet Visitors

Our New York kids arrived late Friday evening for a week long visit! After a full day of school and a long drive, they played for a short time before we found Ryan (8) and Brenna (6) sound asleep in the… crib! Adaptable children, I would say! They slept soundly till morning, Brenna still in her clothes.
Shaela was snuggled in a quilt and blankets on the nursery floor.
Now I lay me down to sleep
is a classic children’s prayer from the 18th century.
The version printed in The New England Primer
(and the one I was taught as a child) goes:

Now I lay me down to sleep,
I pray the Lord my soul to keep;
if I should die before I wake,
I pray the Lord my soul to take.

After garage sales Saturday morning and enduring some very cold and blustery weather it was home with a box of donuts (a Pop-Pop tradition) and teatime (a Mom-Mom tradition).

To keep Raider from constantly barking at Rudy (their Yorkie-poo puppy),  I placed two baby gates in doorways keeping one pup in the front of the house and the other in the back. I don’t think Raider will ever be keen on having canine house guests.

This is our precious daughter, Jill who is mother to Ryan, Brenna and Shaela and Jamie’s twin.
Torrential rain with lightening all day and night on Saturday kept everyone indoors. Jamie and family came over and Jill made a big bowl of her own version of Chicken Riggies.
It is a regional dish of the Utica and Rome area in New York. I was delicious.  (I will be sharing her recipe)

The kids all played really hard. I didn’t head upstairs where the boys spent most of their time. But, I could hear they were having a great time!

Pistachio Nut Cake

I had been wanting to try this cake recipe from my sweet blogging friend, Mildred.
I baked one up Saturday morning to take to Jamie’s that afternoon.
After enjoying her delicious meal of Crock Pot Pulled Barbecue Chicken, coleslaw and onion rings, Josh made us coffee with his French press and we relaxed at the table with dessert.
Well, we relaxed.
They scurried about tending to their five energetic cherubs!
 
 
The youngest energetic cherub enjoyed getting in front of the camera lens as I tried to snap a few photos of the cake.
 
 
Cambrie also helped me unload load the dishwasher.
This little 14 month peanut is a fearless and constant climber.
Those very short legs do not hinder her from scaling the highest heights.
 
Here is the recipe for the cake that is just as delicious as Mildred says.
But even better than the cake is a story associated with the author of the cookbook and my dear friend, Mildred.  It is a must read story! Thank you, Mildred, for sharing it. ♥
 
 
 

Pistachio Nut Cake

slightly adapted from: A Measure of Love by Linda Martin

INGREDIENTS
  • 1 18-oz box white cake mix
  • 1 small pkg. instant pistachio pudding mix – dry
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 tsp. almond extract
  • 3/4 cup chocolate syrup
 
DIRECTIONS
  • Combine all ingredients except chocolate syrup. 
  • Beat 5 minutes at medium speed of mixer. 
  • Pour 2/3 of batter into a prepared Bundt cake pan. 
  • Add chocolate syrup to remaining batter and mix. 
  • Pour over batter in pan. 
  • Bake at 350 degrees for 50-55 minutes.
 
Glaze (Optional)
  • 1 cup 10X sugar stirred with cream to desired consistency.
  • Garnish with additional chopped pistachio’s

Family Time and Cheesecake Shooters recipe

We celebrated Valentine’s Day with family on Sunday.
Jamie and family came over and we picked up my mom.
An easy meal, I made hoagies, soup and Greek Panzanella Salad and of course, potato chips because, you can never have enough potato chips 😉

 Cheesecake Shooters were a hit (recipe below)

a little love for everyone

Cheesecake Shooters
from Souffle Bombay

8oz cream cheese, softened
16 oz sour cream
1 small box vanilla instant pudding
1/2 cup sugar, plus 1 TBS
1 1/2 teaspoons vanilla
1 can of cherry pie filling
1 pack (not box) of plain graham crackers
3 TBS melted butter

Optional: 2 1/2 ounce shooter cups with lids usually found at party stores or wholesale clubs.

In your mixing bowl combine the cream cheese and sour cream until blended. Pour in the pudding mix, sugar and vanilla and mix on medium for 3 minutes more. Place in the refrigerator for at least 15 minutes.

Crush the graham crackers in your food processor until just crumbs. Add in the butter and 1 TBS sugar and pulse until combined. Place in a small bowl and set aside.

In your blender or food processor blend/pulse the cherry pie filling until it become syrup (no chunks left). You can of course make your own syrup from strawberries, blueberries etc instead of the pie filling if you have the time. Set aside.

In the shooter cups, wine glasses or whatever you may be using, first spoon enough graham cracker mixture to cover the bottom. Then spoon or pipe in some cheesecake mixture, then spoon enough syrup in to cover the cheesecake mixture, then spoon or pipe in second layer of cheesecake mixture, then place a few drops of syrup on top and swirl around for a spiral design by using a wooden toothpick or skewer.
