Coconut Banana Bread

Easy recipe for a loaf of coconut banana quick bread with a bright citrus glaze of lemon, orange or lime. Serve for breakfast, snack or lunch.
As if banana bread isn’t already a great quick bread for snacking on or with coffee for breakfast, this version, Coconut Banana Bread, is pretty special with the addition of coconut and a bright citrus glaze. You can even add chocolate chips for an even more decadent version!

Birthday Outing with Silas

We were finally able to take Silas out to celebrate his 6th birthday that was back in May.
We went to a Camden Riversharks Baseball game at Campbell’s Field at the base of the Benjamin Franklin Bridge.
 Here at The Camden Waterfront just across the river from Philadelphia, Silas clenches his Finley.

Though he doesn’t look it, Jared had a great time too.
Sweet guy was at a sleepover the night before and hadn’t slept for over thirty hours but was still cheerful and kind.  He dozed in the car then came alert a bit after this 🙂

 

 We had had seats right in the center just behind the dugout but when the sun came out from behind the clouds it got pretty hot.  We moved to higher, shadier seats with an occasional breeze that was better.

Whirlwind

As we get older, it seems we get busier and busier.  Our days have been filled with weddings, showers, graduations, parties, birthdays and get-togethers.  Nary a week goes by that we don’t have an opportunity to gather and celebrate life and milestones.

Mother’s Day Weekend

Saturday, John and I worked from 7am until 3pm in the yard weeding, trimming bushes and adding a new berm where there was a bare spot from a Japanese Maple we lost last year.  We quit to shower and dress for a drive to my cousin’s son’s wedding reception.  We picked up my sister on the way and headed to a lovely evening with family and friends.
Johnny and Nanea had a beautiful beach wedding a few weeks ago in Hawaii.

Pasta with Fresh Veggies Sausage & Pecorino

Pasta with Fresh Veggies Sausage & Pecorino

Modified from Cooking Light SEPTEMBER 2009

Print Recipe

Ingredients
8 ounces uncooked penne
12 ounces (about 4 links) sweet Italian sausage, casings removed
2 Tbs. olive oil
1 cup onion, cut into slivers
bunch fresh asparagus cut into 2-inch pieces
2 teaspoons minced garlic
1 1/4 pounds tomatoes chopped
3/4 – 1 cup grated fresh pecorino Romano cheese (I like more cheese for flavor)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup torn fresh basil leaves
fresh parsley, chives, oregano to taste (optional)

Preparation
1. Cook pasta according to package directions, drain.

2. Place asparagus into a microwave safe dish; add a couple Tbs. water; cover with plastic leaving a small vent and cook on high 2 minutes. If you prefer, you can cook the asparagus in the skillet with the sausage and onion.

3. Heat a large nonstick skillet over medium-high heat. Remove casings from sausage. Add oil to pan; swirl to coat. Add sausage, cook and using spoon to break up the sausage. Add the onion to pan and cook until the sausage is cooled through and the onions are , stirring to crumble sausage. Add garlic; cook 1 minute. Stir in tomatoes; cook 2 minutes. Remove from heat; stir in pasta, 2 tablespoons cheese, salt, and pepper. Sprinkle with additional cup cheese and basil.

Serves 6-8

Pita Triangles

1 bag pita bread
olive oil
Kosher salt
garlic powder
black pepper

Preheat the oven to 375 degrees F.

Cut each pita in half and then each half in triangles and place them in a single layer on a sheet pan. Brush lightly with olive oil and sprinkle with salt, garlic powder and black pepper.

Bake for 10 minutes.

Heading back

Last year we hosted a young lady from Spain for 7 months as she interned at the same company John works for. After 18 months here in the United States, she is returning to Spain.

As a parting gift, Aldara & Sergio gave me the lovely orchid (in the foreground) to add to my collection and a Martha Stewart Pies & Tarts cookbook.
These gifts will be enjoyed and serve as a sweet reminder of our friendship with this dear couple!

A Child Again

it starts with the sound of the sirens in the distance…
and builds as the shrill intensifies and the fire truck rounds the corner with lights flashing…
a little girl of long ago, excitedly emerges and waves as Santa drives by the house…
I am transported back many years with the same excitement filling my heart… every year!
John asked, ‘Doesn’t it look a little silly you being out here waving to Santa without any children around?’ Ah, but there is a child here!
For it is good to be children sometimes, and never better than at Christmas, when its mighty Founder was a child himself.

Charles Dickens

I assume I get this charge because my parents made a big deal of Santa when we were children.  My Mom and Dad did not come to know the Good News and embrace Jesus as their Savior until they were in their later years.  Though Santa was never the focus of our Christmas celebration of Christ’s birth, and our grandchildren  have always understood the fantasy of Santa, I think their Mom-Mom will always run out to wave as the fire truck passes by.

Cambrie In Mom-Mom’s vintage Christening Dress

While watching our sweet, baby granddaughter, Cambrie the other day, I dressed her in the Christening dress that belonged to me. Then I made a picture to look like an old cabinet photo.
Irresistibly hug-able, this little one is 6 weeks old already!

Grandmother’s Vintage Plant Sedum

Vintage sedum plant planted in new 1950's suburb home

 

This plant is special to me for many reasons. It grows anywhere it’s planted, is drought tolerant, is absolutely care free, it gets pretty lavender/pinkish flowers in late summer that attracts butterflies and is insect resistant. This vintage sedum plant has been in my family for generations.
