Ham & Split Pea Vegetable Soup

Not much better than a comforting pot of soup when one wakes up and it looks like this outside the window…
  So, using a meaty ham bone I tossed into a freezer bag while cleaning up after Christmas dinner, I began by making stock.

 The bone was still frozen when I placed it into a pot with coarsely chopped veggies.

 Bring to a boil,

lower heat, cover and simmer two hours
Allow to cool, strain broth, pour into containers and refrigerate (or freeze if using later)

Ham Stock

PRINT RECIPE
large ham bone, preferable with some meat still attached
8+ cups water to almost cover
2 large carrot, sliced into large chunks
2 large onion, quartered
4 stalks celery, coarsely chopped
1/2 cup fresh parsley
1 bay leaf
5-10 peppercorns
No need to add salt


Directions:


Gently simmer ham bone with carrot, celery, onion, parsley, bay leaf, peppercorns, and water in a large pot for 2 hours. Let cool and strain, pulling off usable meat and discarding the solids.
Now, on to the soup…
I love traditional split Pea soup but hoping to appease John’s dislike of that green goodness, I made a soup using just 1 cup of dried split peas and lots of vegetables with some pasta thrown in for good measure. Basically, I used what was in the crisper drawer.  

Ham & Split Pea Vegetable Soup
PRINT RECIPE
Note:  remove the solidified fat from the top of the cold ham broth.  Discard or set aside for making bird suet that I will share in my next post.
10 cups Ham stock
1 cup dry split peas
3 medium tomatoes, chopped
2 carrots, chopped
1 large onion, chopped
1/2 bell pepper, chopped
1 cup thinly sliced cabbage
1 cup small pasta like shells or elbow
ham pieces cut from ham bone (if desired)
Parsley for garnish (optional)
In a large Dutch oven, bring the ham stock and peas to a boil.  Reduce heat, cover and simmer about an hour.
Add tomatoes, carrots, onion, bell pepper and cabbage; simmer, covered, 20 minutes.
Add pasta, simmer, covered 10 minutes more
Adjust seasonings, if desired
After shoveling snow, serve a nice bowlful by the fireplace…
 with a good friend

updated foyer

We have lots going on right now but last night I did a small foyer change.  It was an impromptu change brought about as we are readying the patio for winter. I like the change for now.
 I just pulled a few things from nearby places
  bringing together the chartreuse green in the flowers and apples

(it is hard to see, but Raider is lying in a sunbeam under the living room coffee table)
John’s 96 year old Aunt Marie passed away yesterday.  We have been visiting with her in the hospital making the hour drive each way for the past couple of weeks.  Aunt Marie never had children. She has one niece who lives in Indiana, John and his brother.  We will all be making funeral arrangements and working together to liquidate her home.
Our Jamie is scheduled to have her baby tomorrow!
Life can get so full and this is one of those times.

Switcheroo and Birthday Fun

After a two week visit in New Jersey, our daughter, Jill and family headed back to their New York home.
They took Jared with them and left their youngest daughter, Shaela here with us!
Not permanently or course, just for a week. 
Keri came by to keep her cousin company and the two of them made a cake

 An impromptu overnight visit from Jill and family was super special!
They were returning from a week-long vacation in Myrtle Beach and made the 10-hour drive to our home to rest up before continuing another 5.5 hours to their NY home the next day.
See the center photo above… Ryan happily completed his first 5-mile run with his mom!
 We made the most of their time here by having all of the cousins together on this hot, humid day.
Since it was another stormy day, the boys laughed and played on their various devices.
 And the girls played dress-up and giggled a lot
 Chloe tried to sweet-talk PopPop into giving her the cell phone
Abbey had just a few okay hours after her wisdom teeth extractions before a week long time of great discomfort. Her face is puffy in these photos taken at the Gazebo on Main Street of our town.

Rainy Day Yard Work

Saturday was cloudy, drizzly, humid and messy.  But it didn’t stop us from putting in a long and tiring day of yard work.
(edging berms, weeding, trimming branches, planting, debris removal, pond cleaning to name just a few)
Trying to catch up on all of those muscle and bone-wearying chores that come with yard care.
 window boxes filled by a sweaty, disheveled, camera-toting nut that had to change from early morning sweatshirt to sleeveless shirt as the day and hard work progressed.

 companion and sentry scowled and barked each time I rounded a corner or vanished from sight

 flower container returned to front door after cleaning and disinfecting from brood of birds that took up residence for several weeks.
~ i will just say, nasty ~

Last spring, our township removed a large tree from the curb edge that had been in decline for several years.  In the fall, they took out most of the stump leaving a large mound of wood chips.

John used a hatchet to get more of the stump out and then leveled the surface.
Instead of planting grass seed, he bought sod and we got it down this week.
We also planted a few more raspberry and blackberry bushes.
still more work to be done…
mulch ordered for Saturday delivery. bushes and boxwood still need hedging.
but that was enough for one day.

i leave you with one last photo from someone who usually (successfully) does many things at one time…

(I did manage to bake a lovely batch of sweet rolls from this over-zealous dough)

all is well

a little wind blown
We had a couple of shutters blown off the house and a large, heavy bench from the porch end up in a flower bed, but nothing that could have been.  We are very thankful. Many are still without power.  The number of power outages in New Jersey from hybrid storm Sandy climbed to 2.7 million. As I type, our utility company still has 900,000 customers without power.
 Yesterday I drove to Jamie’s for some time with the kids.  Lots of traffic lights out and a detour from a downed tree but no problem getting there.  Caleb was so excited to see a crew mulching fallen branches.
 Drizzly cold and windy, we got some outside time while jumping in a pile of wet leaves
 and a warm hug
a little baking
 a 1st hurricane deserves a 1st lollipop ~ it was well received!
and almost shared with a friend 🙂

Change of Plans

We had planned to make the 6-hour drive north to visit our daughter in New York but instead will be cleaning out the gutters and storing away outdoor furniture this weekend in anticipation of hurricane Sandy should she decide to smack into New Jersey.
