It is hard to beat a breakfast of homemade waffles hot off the pan drizzled with syrup and melting butter.  We start our mornings early and when our grandson is here, he leaves for school by 7 AM. He doesn’t always want to eat breakfast but when he does, he can down a hearty serving of these delicious homemade waffles.

This easy recipe freezes well for a quick heat-and-serve on busy mornings. Often I make a batch and after allowing to cool completely, I freeze them. They will stay fresh when sealed in freezer zip-close bags.
 
When needed, just pop the waffles into the toaster for a few minutes and they are piping hot and ready to serve. No need to thaw first.
 
Waffles are really easy to make and cost just pennies.
They come out of the waffle maker easily, piping hot and ready for a little butter and syrup.

A favorite when grandkids sleep over and a great recipe for kids to help prepare. Noah, who enjoys cooking liked the waffles and the handheld rotary beater so much I ordered one for him to use at home.

Begin by beating the eggs in large bowl until fluffy. This beater finally wore out and was replaced by the one Noah is using.

Homemade Waffles

Servings: makes 8 waffles
 
INGREDIENTS:
2 eggs
2 cups all-purpose flour
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 3/4 cups milk
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
 

DIRECTIONS:

Preheat waffle maker.

Beat eggs in large bowl with hand beater until fluffy.

Combine the flour, sugar, baking powder and salt.  Add the dry ingredients, the milk, vegetable oil and vanilla;  whisk just until smooth.

Lightly spray the preheated waffle iron with non-stick cooking spray. Pour a scant 1/2 cup batter onto the hot waffle iron. Cover and cook until golden brown, about 2 minutes. Serve hot.

Your family will love these homemade waffles for breakfast! Easy recipe that also freezes well for those busy days when you just have time to heat and serve.

    These look great. I'm a fan of all breakfast foods and sometimes do French toast for dinner. My favorite is to warm up the syrup for ten seconds. Wishes for a cozy Monday!

    Oh, I adore waffles, sometimes I like them with tea, or coffee in the afternoon and if that's like at 6 pm, than it's dinner! I make them for my grandgirls when they come to stay with me too, a favorite of kids.

    Home made waffles are a favorite here too – in fact when each of the kids moved out solo one of the first small appliances each bought was a waffle-iron. I don't know how much use they've had, but it was a sweet thought.
    I often separate my eggs and fold the beaten whites into the batter for a lighter waffle.
