Here is how to make yummy cinnamon swirl mini bread loaves.

 

A vintage chic Easter dinner for two includes an easy recipe for mini cinnamon swirl bread loaves.
Swirls of cinnamon and sugar (you can also add raisins) with a sweet frosting and festive sprinkles are just the right size for two.  The loaves can be made ahead; wrapped well and frozen.  Add the frosting after thawing.  If planning to toast, omit frosting as most of it melts off.

how to make mini cinnamon swirl bread loavesAfter the bread machine dough cycle ends and the machine beeps, remove the dough to a lightly oiled work surface or on silicone mats. 

 

Divide the dough into 3 equal pieces using a kitchen scale or by just eyeballing it. Roll each piece of dough 5-inches x 10-inches and then spread about 2 tsp. butter onto each.

Cover the pans lightly and place in a warm, draft-free place. Allow to rise for another 30-60 minutes.

Bake in a preheated 350 degree oven for about 18-20 minutes or until golden brown. Tent with foil if browning too quickly.

 

 

Cinnamon Swirl Mini Bread Loaves

PRINT RECIPE

BREAD INGREDIENTS

  • 1 large egg plus enough very warm water to measure 1 cup
  • 1/4 cup butter, softened
  • 1 1/2 tsp. salt
  • 3 cups bread flour
  • 3 Tbs. Nonfat dry Milk
  • 3 Tbs. sugar
  • 2 tsp. Bread Machine Yeast

 

FILLING

  • 2 tbs. sugar
  • 1 Tbs. brown sugar
  • 1 Tbs. cinnamon
  • 2 Tbs. butter, softened

 

Add all of the bread ingredients in the order recommended by manufacturer of your bread machine (usually wet ingredients followed by dry ingredients and ending with the yeast).  Set the machine to dough setting. When complete, remove dough from machine and allow to rest, covered for 5 minutes.

 

Spray three 3-inch x 5-inch mini loaf pans.  Divide dough into 3 equal pieces.  Roll each piece to 5-inches x 10-inches. Spread about 2 tsp. butter onto each.  Sprinkle each with  third of the sugar mixture.  Beginning at the short side, roll up tightly; pinch edge to seal and place into prepared pan.  Cover lightly and place in a warm, draft-free place and allow to rise for another 30-60 minutes.

Remove from pans to cooling rack.

FROSTING

  • 1 cup confectioners’ sugar
  • 1/2 tsp. melted butter
  • 1-2 Tbs. cream or milk
  • tiny pinch salt (optional)

In a small bowl, combine all ingredients and stir until smooth adding the cream little by little to achieve the right constancy. Spoon/spread over bread; sprinkle with jimmies, if desired.

NOTE: If you want your frosting to be thinner and be more of a glaze, frost when the bread has cooled just a bit.  If you prefer the frosting to be thicker and whiter, allow the loaves to be just a little warm before spreading on the frosting.

    Lorraine this is pure delight! I could comment on each item. You've outdone yourself with this post! Love that tablecloth–what a find for you. And the little crocheted egg with the diorama —wow that flashed me right back to my childhood and a memory I had forgotten. How I used to love those little egg dioramas or whatever else they may have been in. I hope you could use this lovely tables cape more than once!

    I spent a long time on this post,Lorraine. I love that everything there has a story to it. I had some of those crocheted toys for my oldest son but I don't know what ever happened to them. I love that you still have yours.

    It looks like you did a lot of ceramics when that was the craze years ago-me, too. I did all sorts of things..and even did some of the heavy plaster pieces. I don't think I have any of my items left.

    What a fun post and that sweet tablecloth is the perfect beginning touch. xo Diana

    Lorraine, you have out-done yourself, girl! This is BEAUTIFUL! I remember a table cloth very similar to that when I was growing up. My mom always made pickled eggs and pickled beets every year for Easter but never put them in a beautiful salad like that…oh my goodness, it looks heavenly! Can't wait for the recipe for that yummy salad! Thanks for sharing this!
