Colored Deviled Eggs for Easter

Bring springtime to your Easter table with a palate of soft pastel colored deviled eggs that are almost too pretty to eat. Add these lovely pastel colored eggs to your Easter brunch. Colored whites are filled with a classic deviled egg mixture for a favorite appetizer or breakfast dish.
Almost everyone likes deviled eggs in our family. Instead of dying the egg shells, the cooked white part of the egg is colored then filled with the yolk mixture just like regular deviled eggs. A deviled egg dish filled with these colorful eggs looks lovely on the table for Easter brunch or dinner.
 
 
Place eggs into a saucepan and cover with at least 1-inch of water.  Bring to a boil and boil very gently for just a minute. Don’t boil rapidly as the high heat will cause a greenish ring around the cooked yolk.
 
 
Remove the pan from the heat; cover and allow to sit for 25 minutes. Pour off the hot water and fill pot with cold water until the eggs are cool, changing the water several times as it warms.

Colored Deviled Eggs for Easter

 
PRINT RECIPE
 
INGREDIENTS:
  • 6 eggs, hard boiled and peeled
  • 1/4 Miracle Whip or mayonnaise
  • 1 tsp. vinegar
  • 1 tsp prepared mustard
  • 1/8 tsp salt
  • dash pepper
  • 1 tsp Worcestershire Sauce
  • paprika and parsley, for garnish if desired
DIRECTIONS:

Cut eggs in half lengthwise. Scoop yolk out and mask with fork.

Color the egg whites as shown above and allow to dry.

Combine Miracle Whip, vinegar, mustard, salt, pepper and Worcestershire sauce. Stir in yolks.  Refill egg whites with mixture and sprinkle with paprika and tiny snips of parsley, if desired.

    Does the egg whites take on a vinegar flavor?

      Hello Dee,

      I do not notice that the whites take on a vinegar flavor. I have not tasted them alone, only when filled with the yolk mixture that includes a small amount of vinegar in the ingredients.

    I have seen the egg whites died in beet juice, but never in various pastels like this. Very festive!
