St Patrick’s Day Birthday

Today is my mom’s birthday so St Patrick’s Day has always been a special one.  The photo above, from the 1960’s, shows just how much mommy enjoys St Patrick’s Day. I am planning a small birthday get-together for her with traditional Irish dishes.

 

Don’t confuse beef brisket and corned beef brisket.

Brisket is the name of a particular “cut” of beef, which tells you what part of the cow it came from. Corned Beef is a cut of meat (brisket) that has been cured (or pickled) in a seasoned brine. 

Corned beef is a salt-cured beef product. The meat is treated with large grained rock salt, also called “corns” of salt.

How to make corned beef brisket

When the meat has simmered for a couple of hours, add the carrots and cabbage and continue cooking until tender, about 20-30 minutes.

Corned Beef Brisket with a Sweet Mustard Glaze Recipe

PRINT RECIPE

  • To make corned beef brisket, begin by removing the brisket from its wrappings and place in a Dutch oven. Cover with water and add the flavor packet that is included.
  • Heat to boiling; reduce temperature and allow to gently simmer on the stove top a couple of hours. Add 5 peeled and cut carrots and a head of cabbage that has been cut into wedges. Continue cooking until vegetables are tender.

Mustard Glaze

INGREDIENTS:
  • 1/2 cup light corn syrup
  • 1 tablespoon yellow mustard
DIRECTIONS:
When the vegetables are tender, remove the meat and trim the excess fat. Place corned beef brisket on a rack in a broiler pan.

Bring to a boil, and cook over medium heat until slightly thickened, about 5 minutes.

    I cooked my corned beef in the crock-pot for the first time too. I wish I'd known about this glaze. It would have been a nice addition. I'll keep it in mind for the next time.

    I've never been a fan of corned beef but that sure does look good. I cooked one once and it was awful. I do however like Reuben sandwiches.

    Oh my goodness! We have corned beef & cabbage every St. Patrick's day (we're actually having ours tomorrow) and I have never finished it up under the broiler like you did. That looks SO good I may have to give it a go! Thanks for sharing!
